Two a day works wonders
Vitamin B12 2000 mcg from Vitals consists of lozenges containing the biologically active forms methylcobalamin and adenosylcobalamin (also known as dibencozide). These are the forms in which vitamin B12 is found in food and used by the body. Many other vitamin B12 products use cyanocobalamin, a synthetic form not found in nature. In this form, the cobalamin is tightly bound to cyanide, which must first be detached. Cyanide has no function in the body and must therefore be excreted.

In cases of oxidative stress, supplementation with a reduced form of vitamin B12 (methyl- and adenosylcobalamin) may offer advantages over an oxidised form of vitamin B12 (such as cyanocobalamin). Research also suggests that a greater improvement in vitamin B12 status occurs after intake of biologically active B12 than after intake of cyanocobalamin; more B12 is stored in the liver and less B12 leaves the body via urine (longer half-life). The bioavailability is therefore greater.

I see in the information that you should not take vitamin B12 if you have Leber's disease. However, I do not see this warning mentioned for the 1000mcg vitamin B12 from Vitals. Is there a difference here?

Vitamin B12 always contains a cobalamin compound: cyanocobalamin, methylcobalamin, adenosylcobalamin, or hydroxycobalamin. This applies to all variants from Vitals.
The OrthoKennis website lists "Hypersensitivity to cobalt or cobalamin" as a contraindication.
Use high-dose B12 supplements (more than 1000 mcg per day) only if absolutely necessary, that is, when a deficiency has been established. Most people get more than enough B12 through a varied diet (especially animal sources such as dairy, meat, fish, and eggs).

The manufacturer does not state that you must take a tablet daily, but rather that one tablet per day is the recommended daily dosage. It is perfectly fine to stick to one tablet per week; however, you must ensure that the contents remain well-dried, as taking only one tablet per week means it would take two years for the jar to be empty, and lozenges are not very long-lasting once the packaging is opened. The jar is best consumed within six months after opening.
If you plan to take 2000 mcg only once a week, it is advisable to choose the smallest possible packaging. For example, 50 tablets of 1000 mcg would suffice for 25 weeks of use. The Methylcobalamin 1000 µg (vitamin B12) from Solgar comes in a jar of 30 tablets. If you take two tablets per week, that jar would last for 15 weeks.
If you wish to take 2000 mcg per day, you can easily use the Vitamin B12 2000 mcg. There is little point in taking, for example, four tablets of 500 mcg when that would be more expensive.
There is no maximum dose for B12 (our body can easily break down and excrete excess amounts of this vitamin), but you should ensure that you also get enough folic acid and iron, so you do not develop a relative deficiency. If you are using a good multivitamin alongside the B12 tablet, you need not worry about that.
If you are not a vegan but perhaps a vegetarian or someone who consumes little meat and dairy, the chance of developing a B12 deficiency is very small. It is primarily strict vegans and the elderly who experience a deficiency in B12. For them, a dose of 1000 mcg per day is generally more than sufficient.
If you find it beneficial, you can comfortably continue using 2000 mcg per day, but you probably do not really need it. Especially if you have already finished a pack, it is likely that your body’s stores are well replenished, and you can get by for months with the B12 from your multivitamin and daily diet.
