Bergamot is a type of bitter orange with a green-yellow peel. The flesh is very sour, and the fruits are mainly cultivated for the extraction of essential oil from the peel.
Since the sixteenth century, bergamot has been used in perfume formulations. The refreshing and strong citrus aroma is also used as a flavouring for Earl Grey tea.
