In nature, approximately five hundred amino acids exist. Twenty of these are amino acids that serve as building blocks for proteins in the human body, referred to as 'fundamental amino acids'. These fundamental amino acids can further be categorised into 'essential', 'semi-essential', and 'non-essential'. In terms of biochemical structure, taurine is not a true amino acid (although it is often classified as one) and is not incorporated into proteins. In the body, taurine is primarily found in nerve tissue, eyes, and muscle tissue.

For older children and adults, taurine is a semi-essential nutrient and is synthesised mainly in the liver and brain from the sulphur-containing amino acids cysteine and methionine; vitamin B6 is involved in this conversion. Babies and young children cannot yet produce taurine themselves; for them, taurine is an essential nutrient. Endogenous synthesis is limited, and dietary intake is important for maintaining a good taurine status, especially when taurine needs are increased. Since taurine is mainly present in meat, fish, and poultry, vegetarians and vegans are at a higher risk of low dietary intake.
