Hiziki (hijikia fusiforme) is a sea grass that grows on rocky promontories and outcrops off the coast of the South Pacific at depths of one to two metres, as it requires a significant amount of sunlight. After a year, hiziki is hand-harvested in spring, sorted, sun-dried, steamed for several hours, and sun-dried again.
Me-hiziki are the roots of the hiziki plant. Due to their fine structure, they are softer and very suitable for delicate dishes and gourmet delicacies.
