Peak level means that plants are fully grown before they are harvested. This is done by hand to keep the plants intact and undamaged by machines. The plants are then freeze-dried within the hour. This means all liquids, the water, are sublimated out. This leaves only the complex structure of the plant, with vitamins and minerals.
