Lavender is an evergreen, woody shrub that can grow up to 1 metre high, with light green, narrow, thread-like leaves and flowers of a violet-blue colour. Lavender is now cultivated worldwide, but the plant originally hails from countries such as France, Spain, Italy, England, Australia, Tasmania, and Greece. The oil is extracted through steam distillation from the flowering tops and is colourless to pale yellow, with a sweet, floral, and herbaceous scent. It is used in antiseptic ointments and as a fragrance component in soaps, cosmetics, lotions, perfumes, and as a flavouring in foods and beverages.
