Spirulina is a blue or cyanobacterium that naturally occurs in freshwater with low acidity and high carbonate and bicarbonate levels in tropical and subtropical regions. Single-celled organisms and algae form the foundation of the food chain and are therefore highly nutritious. The Aztecs harvested it centuries ago from Lake Texcoco (now Mexico City) and around Lake Chad, the local population uses Spirulina as a natural dietary supplement. Spirulina is cultivated in specially designated pure basins in the USA, Mexico, and Asia. After harvesting, it is only dried, so it undergoes no further processing. Spirulina contains on average 58% protein with a high-quality amino acid pattern. It also contains 7% vegetable fats, of which 10% is the polyunsaturated gamma-linolenic acid. 10 grams of Jacob Hooy Spirulina powder provides 90 mg of gamma-linolenic acid, 0.23 mg of vitamin B1 (21% RDA), 0.4 mg of vitamin B2 (30% RDA), 2.9 mg of iron (22% RDA). The recommended daily dose, 2 tablespoons or 10 grams, also contains 100 mg of chlorophyll, the green powerhouses of the plant.
