Guar gum is made by grinding the endosperm (the inner part) of the guar bean into a fine powder. It mainly contains galactomannan, a soluble polysaccharide. Guar bean fibres are made from the entire guar bean (including the hull and other parts), mainly retaining the natural fibres. As a result, the fibre content is significantly higher than in guar gum. Another difference is that it completely dissolves in water, unlike guar gum, which forms a jelly-like substance.
