Guar gum can, like tapioca and locust bean gum, bind and thicken liquids, even in small quantities. It dissolves well in water and forms a gel-like substance.

What is the Difference Between Guar Gum and Guar Bean Fibres (Sunfiber)
The difference between guar gum and guar bean fibres primarily lies in the way they are processed and used, although both are derived from the guar plant (Cyamopsis tetragonoloba). Guar gum is made by grinding the endosperm (the inner part) of the guar bean into a fine powder. It mainly contains galactomannan, a soluble polysaccharide. Guar bean fibres are made from the entire guar bean (including the hull and other parts), mainly retaining the natural fibres. As a result, the fibre content is significantly higher than in guar gum. Another difference is that it completely dissolves in water, unlike guar gum, which forms a jelly-like substance.
