Shiitake koshin is a dried mushroom with a thin, open cap. Mushrooms can grow abundantly in Japan due to the humid climate and many mountains. Numerous types can be found in the country, but shiitake is the most well-known and widely used variety in Japan. Delicious as a base for miso soup or to add an umami flavour to your meat or vegetable dish.

Usage
Soak the shiitake for about 10 minutes. Then briefly fry the mushrooms or cook them with (miso) soup or other (rice and noodle) dishes. The soaking water can also be used.
