Nori (porphyra) is a specially pressed seaweed in sheets that requires hardly any further preparation and is therefore immediately available for consumption. This seaweed has become very popular worldwide due to Japanese sushi bars. It does not need to be washed or cooked, just gently waved back and forth over a gas flame, which lightly toasts it and gives it a deep green colour.

It can be eaten as is, cut into thin strips and used as a garnish over soups, salads, and pasta, or serve as a 'wrapping' for nori rolls and rice balls. The dried sheets are the end product of an almost artistic cultivation and preparation process. For the cultivation of nori on flat coasts with ebb and flow, the quality of the seed, the temperature of the water, a clean beach, the right harvest time, and correct drying method are all very important factors. As a result, high-quality nori can be quite pricey. The plants are grown on nets, pressed between mats after harvest, and dried in the sun. Lightly toasted, it has a spicy, savoury flavour.
